Hope to lessen my ever-growing anxiety with some new #reads 😊

Welcoming a new day. There's still a lot to do. I'm going to take each concern one day at a time. ♥️

Pandemic memories

Just a thought before I go to bed. Maybe I would need these in between so I can have some lighter reads to refresh my mind before jumping back to #TheTaleofGenji

I realized that throughout the years of working, I got slower in #reading 😅 I couldn't move any further and would have to close the book before this chapter begins. There were a lot of pauses in between tonight's read, and I had to put marks (mostly underline and comment) along the margins to keep up with the details and information from the story.

I haven't really thought of my #RecommMonday pick, however, I have this book on my work table since last Saturday and thought that I need to read again. This is a long read for sure, but the story has captivated me since years ago.

Since yesterday, I have been working on easy to cook recipes with the ingredients I have at home. Now, I got hungry and only have the last pieces of kimchi, soba (buckwheat) noodles, and seaweed. So, here, I made my own ramen dish by mixing them all with a bit of soy sauce, mirin, gochujang (chili paste), and sugar. Yup, a bit of sweet aftertaste there, but the heat is still the stronger flavor.

When I have very little ingredients available to make a complete #pesto pasta, so I ended up using the soba (buckwheat) noodles that I have. Surprisingly, the final dish is delicious. ☺️

A new go-to meal that I crave whenever I would want to have a boost in my energy. It seemed that all of the meals are for sharing, so that is a plus for the family. ☺️
